Why eggs?
It started with one very good egg.
In 2021 Wayan and Putu cooked an egg at a friend's warung, using eggs from his aunt's hens in Tabanan. It was the best egg either of them had ever eaten. Telor is our attempt to make every egg taste like that one, and to be decent neighbours while we do it.
The Telor Pledge (written on a napkin, then framed)
- Hens with a view. Every egg comes from 14 small family farms in Tabanan. We visit. The hens do not care, but we do.
- Bread never goes in the bin. Yesterday's sourdough becomes today's bread pudding. Circle of life.
- Home before sunset. We close at 3 so our team gets their evenings back. Surf, family, nap. Their call.
- No plastic, no exceptions. We tried bamboo straws, paper straws and no straws. Bamboo won.
Overheard at the counter
"Is the sambal supposed to be this good?"
"I came for coffee. I am now on my second Benny."
"Kakak, satu lagi kopi susunya ya!"
"My kid asked if the pink bowl is a dinosaur egg."
